Flank Steak in Parsley and Mustard Sauce


  • 1 tbsp olive oil
  • 1½ lb (700 g) flank steak
  • Salt and pepper
  • 1 cup white wine
  • 3 tbsp chopped fresh parsley
  • 3 tbsp mustard
  • Juice of 2 lemons
  • Place the stainless steel inner pot inside the Instant Pot®. Press Saute and set time to 8 Minutes. Add the olive oil; when hot, sear the meat on both sides, add salt and pepper, remove from pot and set aside.
  • Without washing the bowl, add the white wine and scrape with a spoon for 1 Minute.
  • Press Cancel, return meat to the pot, along with the drippings left on the plate; add the parsley, mustard, and lemon juice.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Pressure Cook, pressure level High, and set the time to 35 Minutes.
  • Once the time is up, press Cancel, turn the steam release handle and wait a few minutes before opening.
  • Serve with fresh parsley.
