Ingredients

  • 1 lb lean ground beef
  • 1/2 cup breadcrumbs
  • 1 egg
  • 1/2 cup onion
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1 garlic clove
  • 1/8 tsp nutmeg
  • 1/8 tsp cinnamon
  • 1/2 cup fresh parsley
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 2 eggs

INSTRUCTIONS

  1. Insert steam rack into inner pot and place 2 eggs on top.
  2. Add 2 cups of water and secure PRESSURE COOKING LID.
  3. Select Pressure Cook on High, set time for 2 minutes and press START. Pressure cook the eggs. When complete, Quick Release pressure and press Cancel. Remove eggs and set aside. Discard water.
  4. Combine all the ingredients to make a homogenous mixture.
  5. Place mixture on parchment paper and shape into a rectangle.
  6. Peel eggs and place on the short end of the rectangle. Roll the meatloaf over the eggs to make a cylinder shape with the eggs in the middle. Make sure to seal the seam and the openings on both ends of the meatloaf so that none of the egg is showing.
  7. Place the air frying basket inside the inner pot. Cut tinfoil into a circle and place it at the bottom of the air frying basket. Shape the tinfoil over the sides of the air frying basket. Place the meatloaf on the tin foil.
  8. Cover the meatloaf with the Air Fryer Lid. Select BAKE, set the time to 30 minutes, then press START. Make sure to flip the meatloaf halfway into the cooking time to ensure that all sides are browned equally.
  9. After the cooking time is up, let it rest for 10 minutes. Slice and serve with mashed potatoes and your favorite side of vegetables.

Notes

If desired, tomato sauce maybe added at the last stage of cooking to finish (5 minutes before the end of the cooking time).
