Chicken Tacos


  • 2 pounds boneless chicken thighs
  • 1 pound boneless chicken breasts
  • 1 cup mild roasted tomatillo salsa
  • 2 to 3 tablespoons taco seasoning
  • Butter lettuce leaves
  • Sliced avocado
  • Put the chicken in the bowl of the Instant Pot. Add the salsa and seasoning. Toss to coat. Secure the lid, select the manual or pressure cook setting, and set it to high pressure for 10 minutes for fresh chicken, or 20 minutes for frozen chicken.
  • When the timer is done, quick release the pressure. Shred the chicken using 2 forks and serve hot.
