Cassava Arepas


  • ½ lb (250 g) cassava
  • 2 tbsp extra-virgin olive oil
  • 2 tbsp water
  • ⅓ cup (80 g) mozzarella cheese
  • Salt, black pepper turmeric and oregano, to taste
  • Add the cassava to the Instant Pot® inner pot, with a pinch of salt.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Steam and set time to 17 Minutes .
  • Let cool for about 12 Minutes and grate the cassava.
  • Place the grated cassava in a bowl along with the olive oil, water, salt, and spices, to taste.
  • Using your hands, knead well, form into small balls, and fill each with a square of cheese.
  • On the Instant Vortex control panel, press Bake and then set time to 10 Minutes and temperature to 340°F (170°C). Press Start.
  • Once preheated, add the arepas to the basket and close.
  • Remove, turn over, and put back in for 10 Minutes at 340°F (170°C).
