Air Fryer Potato Salad


  • 4 cups Yukon gold potatoes
  • 1 tbsp olive oil
  • 1 yellow onion
  • 2 scallions
  • 2 tbsp whole-grain mustard
  • ¼ cup white distilled vinegar
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tsp black pepper
  • In a large bowl, toss the potatoes, onion, olive oil, and half of the salt together.
  • Air Fry at 400°F / 205°C for 15-17 Minutes, or until golden and crispy on the edges.
  • Meanwhile, whisk the whole grain mustard, white distilled vinegar, sugar, the remaining salt, and black pepper together until emulsified.
  • Toss the fried potatoes with the dressing and the diced scallions. Serve warm or cold.
