In a large bowl, combine cooked rice, soy sauce, oyster sauce, sesame oil, frozen mixed vegetables, minced shallot, and minced garlic clove. Stir until thoroughly mixed.
In a mixing bowl, whisk together the eggs until smooth with a pinch of salt. Set aside.
Remove the tray in the air fryer. Pile the rice mixture on ⅔ of the air fryer basket and top with the butter. Pour the whisked eggs in the remaining space.
Air Fry at 385°F / 195°C for 8-10 minutes. After 5 minutes, break up the cooked egg and stir the fried rice together. Continue air frying until the top is golden and crispy. Serve warm or at room temperature. Enjoy!
