  • 3 lb. grass-fed boneless beef brisket, trimmed
  • 1 tbsp. oil, for sautéing
  • 1 onion, sliced
  • 4 garlic cloves, minced
  • 4 tbsp. apple cider vinegar
  • 1 cup beef broth
  • 3 tsp. liquid smoke
  • 1 cup ketchup
  • 2 tbsp. apple cider vinegar
  • 2 tsp. liquid smoke
  • ¼ cup packed brown sugar
  • ⅓ cup honey
  • 4 tbsp. Worcestershire sauce
  • 2 tsp. garlic powder
  • Salt to taste
  • 2 fresh peaches, peeled and chopped
  • ½ cup peach preserves

This Instant Pot Peach BBQ Brisket is your shortcut to smoky, slow-cooked flavor without the smoker or the wait. Seasoned with a bold spice rub and pressure cooked to tender perfection in just over an hour, this brisket is juicy, flavorful, and melt-in-your-mouth good. Finished with a sweet, smoky, and slightly spicy peach BBQ glaze, it’s the perfect balance of summer comfort and BBQ flair. Whether you're cooking for a crowd or just want a no-fuss dinner with big flavor, this recipe proves that one appliance can do it all.

INSTRUCTIONS

  1. To make the spice rub, mix 1/4 cup of brown sugar, 4 tablespoons of chili powder, 1 tablespoon of smoked paprika, 1 tablespoon of garlic powder, 1 tablespoon of onion powder, 1/4 teaspoon of cayenne pepper, 2 teaspoons of salt, and 2 teaspoons of black pepper together in a bowl. Rub generously all over the brisket. Let it sit at room temperature for 30 minutes to absorb the flavors.
  2. Set the Instant Pot to Sauté mode. Add oil, then sauté the sliced onions and minced garlic for 2–3 minutes until fragrant and slightly softened.
  3. We’re building flavor here. Add 4 tablespoons of apple cider vinegar, the beef broth, and 3 teaspoons of liquid smoke to the pot. Stir to deglaze and scrape up any browned bits at the bottom.
  4. Place the seasoned brisket into the Instant Pot. Seal the lid, set to High Pressure, and cook for 1 hour and 10 minutes. Once done, allow a natural release for 15–20 minutes before opening.
  5. Remove the brisket and set aside (tent with foil to keep warm). Switch the Instant Pot back to Sauté mode and let the liquid simmer and reduce by half. Should be about ¾ cup.
  6. Add the ketchup, 2 tablespoons of apple cider vinegar, 2 teaspoons of liquid smoke, ¼ cup packed brown sugar, honey, Worcestershire sauce, 2 teaspoons of garlic powder, salt to taste, fresh peaches, and peach preserves directly into the pot with the reduced liquid. Simmer until thickened and glossy—about 25 minutes.
  7. Slice the brisket against the grain, drizzle generously with the Peach BBQ sauce, and serve with pickles, soft white bread, coleslaw, or your favorite BBQ sides!! Enjoy!
