Suadero Tacos


  • 3 lb (1.5 kg) suadero + fat
  • salt
  • avocado oil
  • 4 cups (1 L) cow's milk
  • 4-5 bay leaves
  • 5 large peppers
  • ½ onion, cut into chunks
  • 3 cloves garlic
  • 3 lemons, peels only
  • Longaniza sausage
  • tortillas
  • fresh cilantro, finely chopped
  • finely chopped onion

  • Add salt generously all over the suadero.
  • Place the stainless steel inner pot inside the Instant Pot®. Press Saute and when Hot appears, add the avocado oil and fat. Let release more fat and brown a little and add the suadero. Sear. Add the milk, bay leaves, peppers, onion, garlic, and peels.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Meat/Stew and set time to 35 Minutes.
  • When done, press Cancel and turn the steam release handle to Venting.
  • Remove the meat and cut (it falls apart on its own!). Remove the liquid left in the pot. Press Saute. Add a little more avocado oil and brown the longaniza sausage and suadero meat.
  • Assemble the tacos and serve with the accompaniments.
