Rolled Pancetta


  • 2 lb (1 kg) bacon, skin-on
  • Garlic powder
  • Paprika powder
  • Salt and white pepper, to taste
  • Olive oil
  • Remove the fibers from the pancetta and score the meat. Add spices to taste. For more flavor, you can use Dijon mustard and smear the inner part of the meat.
  • Roll up the piece of pancetta and secure with kitchen twine or string.
  • Place the pancetta on a piece of aluminum foil, making a small packet to contain the fat rendered during cooking, that will be used to glaze the porchetta.
  • On the Instant Vortex control panel, press Air Fry, then set temperature to 375ºF (190ºC) and time to 55 Minutes. Press Start.
  • Remove carefully and glaze the porchetta with the remaining rendered fat. Cut carefully and serve with French fries on a sandwich bun.
