Beef Short Ribs with Ginger-Mango Barbecue Sauce


  • 3 pounds beef Short Ribs
  • 1/2 cup beef stock
  • 2 1/2 cups mango
  • 1 medium onion
  • 2 tablespoons Ginger
  • 1 cup barbecue sauce
  • Place beef short ribs and onion into the Instant Pot. Add 1/2 cup beef broth. Close and lock the lid.
  • Use Beef, Stew, or High-Pressure setting on the Instant Pot. Set program to cook for 60 minutes.
  • While the short ribs are cooking, combine 1 1/2 cups mango, ginger and barbecue sauce in a medium saucepan. Simmer 20 to 30 minutes until desired thickness is reached.
  • When beef is finished, use the Quick-Release method to release pressure; carefully remove lid.
  • Remove short ribs and stir in remaining 1 cup mango.
  • Season with salt and pepper, as desired. Skim fat from cooking liquid; serve over short ribs. Enjoy!
