Garlic Crayfish


  • 1 lb (500 g) crayfish, peeled and rinsed
  • ½ onion diced
  • 1 small head garlic (10 cloves garlic)
  • 2 tomatoes, peeled and diced
  • 1 cup crayfish shell or fish broth
  • 3 tbsp ají amarillo puréed, Peruvian yellow pepper
  • chopped cilantro
  • Optional: chopped aji limo, lemon drop pepper
  • Place the inner pot inside the Instant Pot. Press Saute and set time to 15 Minutes. Add the onion and garlic until golden brown.
  • Add the tomatoes and ají amarillo. Sauté lightly and add the crayfish. Change the setting to Meat/Stew, set time to 5 Minutes. Add the broth, cilantro and ají limo (optional).
  • Lastly, serve with rice or other side dish of your choice.
