Chicken Parmesan Sliders

Ingredients
  • 3 chicken breasts, thin cut ㅤ
  • ¾ cup flour ㅤ
  • 2 eggs ㅤ
  • ½ cup half and half ㅤ
  • 1 ½ cups panko breadcrumbs ㅤ
  • 1 cup grated parmesan, plus more for sprinkling ㅤ
  • 1 cup fresh mozzarella ㅤ
  • 1 cup marinara sauce ㅤ
  • 6 slider buns ㅤ
  • 2 tbsp butter, sliced in sixths ㅤ
  • Salt as needed ㅤ
  • Non-propellant organic olive oil spray
Instructions
  • Prepare a breading station. In one bowl, place the flour. In a separate bowl, whisk together the eggs and half and half. In a third bowl, combine the panko breadcrumbs and the grated parmesan.
  • Coat the chicken in the flour mixture, then the egg mixture, then the breadcrumb mixture. Make sure to pat down the breadcrumb mixture to ensure an even coating. Set aside and continue until all chicken pieces are breaded.
  • Preheat the air fryer to 400˚F / 205˚C. Place the chicken in the basket, careful not to overlap. Spray with non-propellant organic olive oil spray and sprinkle with salt.
  • Air fry for 17-19 minutes, flipping the chicken over after 12 minutes and spraying with more olive oil spray.
  • Leave the chicken in the air fryer basket and evenly top with fresh mozzarella. Broil at 400˚F / 205˚C for 6-8 minutes, or until the cheese has browned and is melted. Remove the chicken from the air fryer.
  • Remove the tops from the sliders in one sheet, leaving them attached to each other. Place the bottom buns in the air fryer basket. Spoon a little bit of sauce on each bun. Place each chicken breast over two of the bottom buns. You should have three chicken breasts layered in a row on top of six buns. Spoon the remaining sauce on top of the chicken. Add the top slider buns. Dot each bun with a slice of butter and sprinkle with parmesan cheese.
  • Air fry at 375˚F / 190˚C for 6-8 minutes, or until the tops of the buns are golden. Carefully remove all the buns at once from the air fryer with a spatula. Cut along each bun and serve while warm. Enjoy!
