Vegetable Yakimeshi (Japanese Vegetable Fried Rice)

Ingredients
  • 2 cups rice, cooked
  • ¼ medium onion
  • 1 handful green onions
  • 2 eggs
  • ¼ cup vegetable broth
  • 2 tsp sake
  • 2 tsp soy sauce
  • 1 handful shitake mushrooms or mushrooms
  • Carrot, chopped
  • ½ cup tofu, cut into squares
  • Salt and pepper to taste
Instructions
  • Place the stainless steel inner pot inside the Instant Pot®. Chop the onions, carrot, and mushrooms.
  • Add the oil to the steel inner pot, put the ingredients in, press Saute, and set time to 3 Minutes.
  • Mix the rice with the egg and beat.
  • Add the rice mixture and stir constantly so it doesn't burn. Add the tofu and continue stirring.
  • Add the sake and vegetable broth and cook for 4 more minutes.
  • Add the soy sauce, season with salt and pepper. Cook, stirring with a wooden spoon, for 4 more minutes.
  • Then press Cancel and your vegetarian yakimeshi is ready to enjoy.
