      Sauteing eggplants are similar to sauteing other vegetables.

      How our Saute program works:

      Less / Low: Simmering, thickening and reducing liquids
      Normal / Medium: Pan searing or sautéing or browning meat
      More / High: Stir-frying

      The display unit will display “On” while preheating then Switch to “Hot” when temperature is reached. Switching from “Hot” to “On” indicates cooker is maintaining temperature. If recipe ingredients are added before “Hot” message appears, it may not appear at all. As a safety precaution, maximum time is 30 minutes and cannot be adjusted.

      Slice up your eggplant to your preferred size.
      Using Normal or More heat level for the Saute program wait till unit displays “Hot”.
      Add your preferred cooking oil wait till oil is warm.
      Then add in eggplant and saute to desired doneness.
