Add 1 tsp salt and 1 tsp freshly ground black pepper to the chicken breast. Air fry at 400°F / 205°C for 14-15 Minutes, or until cooked through and golden brown. Let cool for 5 Minutes then dice. Set aside.
Toss the sweet potato with the olive oil then Air Fry at 400°F / 205°C for 7-8 Minutes, or until golden brown. Set aside.
Add all ingredients, including the chicken and sweet potato, to a large mixing bowl and toss to combine with the dressing. Serve and enjoy!
