Pistachio-Crusted Fish


  • ½ cup cashews
  • ¼ cup Water
  • ¼ cup olive oil
  • 2 cups basil
  • Juice of 2 lemons
  • 2 pieces white fish
  • ½ cup shelled pistachios
  • Salt and pepper
  • In a food processor, add the cashews together with the water, the olive oil, the basil leaves, and the lemon juice. Season to taste and process until it forms a creamy pesto.
  • Season the fish with salt and pepper and then spread the pesto over it; add the shelled pistachios.
  • On the Instant Vortex control panel, press Air Fry, then set time to 6 Minutes and temperature to 390ºF (200ºC). Press Start.
  • Once Add Food appears on the display, open the basket and place the pieces of fish on the rack, without stacking them. If you want to make more quantity, do it in two batches. Close.
  • By using the Instant Vortex Silicone Rack, you can prevent fish from falling apart.
  • Remove when the pistachios are golden and the fish is white. If they are still not golden enough, program an extra 2 minutes.
  • Remove and serve.
