Ingredients

  • 2 large Lemons
  • 1 cup cold water
  • Nonstick cooking spray
  • 4 frozen salmon fillets
  • 1/4 tsp salt
  • 1/8 tsp black pepper
  • 1/4 cup purchased basil pesto
  • 2 frozen steam-in-a-bag potatoes and green bean blend

INSTRUCTIONS

  1. Remove 1/4 cup juice from one of the lemons. Cut remaining lemon into wedges.
  2. In a 6-qt Instant Pot combine cold water and lemon juice. Coat wire rack with cooking spray; add to pot. Arrange salmon fillets, skin sides down, on rack (fillets may overlap slightly). Lock lid in place.
  3. Set Instant Pot on High Pressure to cook for 1 minute. Release pressure quickly. Open lid carefully. Salmon should flake easily with a fork.
  4. Season salmon with salt and pepper. Serve with lemon wedges, pesto, and potato and green bean blend.
