Fish Crackling Sandwich

Ingredients
  • 2 tbsp corn starch
  • ½ cup flour
  • 2 white fish fillets
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Sliced sweet potato
  • ⅓ red onion, julienned
  • ½ bell pepper, julienned
  • Salt to taste
  • Juice of 2 lemons
  • 2 tbsp olive oil
Instructions
  • Combine the corn starch with the flour.
  • Season the fish, add 2 beaten eggs and coat.
  • On the Instant Vortex control panel, press Air Fry, then set time to 9 Minutes and temperature to 365ºF (185°C). Press Start.
  • Once Add Food. appears on the display, dredge the fish in the dry mixture and add to the basket. Close tray and let cook.
  • Brush the sweet potato with olive oil and season with salt and pepper.
  • On the Instant Vortex control panel, press Bake, then set time to 6 Minutes and temperature to 355˚F (180˚C). Press Start.
  • Once Add Food appears on the display, add the sweet potatoes to the basket. Close tray and let cook.
  • Mix the onion and sweet potato, season with salt, lemon juice and olive oil.
  • Put the sweet potatoes, the fish and the salad on the bread of your choice; garnish with chopped coriander.
