Ingredients

  • 2 pounds sweet potatoes
  • 1 cup orange juice
  • 1 tablespoon orange zest
  • 2 tablespoons dark brown sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons butter

INSTRUCTIONS

  1. Place potatoes in Instant Pot®; stir in the juice, zest, sugar, salt, and cinnamon. Place lid on pot and lock into place to seal. Pressure Cook or Manual on High Pressure for 5 minutes. Use Quick Pressure Release. Press Cancel.
  2. Carefully drain liquid from the pot. Turn pot to High Sauté, add the butter and stir into potatoes until melted. Press Cancel.
