Bean Soup


  • avocado oil
  • ¼ onion
  • 2 cloves garlic
  • 4 cambray nopales
  • 1 lb fava beans soaked for 2-3 hours
  • 2 Saladette tomatoes
  • Salt to taste
  • 2.5 L chicken broth
  • Fresh fava beans boiled and without skin
  • olive oil

  • cotija cheese
  • Place the stainless steel inner pot inside the Instant Pot®. Press Saute and when Hot appears, add the avocado oil and stir fry the onion and garlic. Add the nopales, beans, tomato and season with salt. Add the consommé, let it boil and check for salt.
  • Close and lock the Instant Pot® lid. Make sure the steam release handle is turned to Sealing. Press Bean/Chili and set the time to 8 Minutes.
  • When done, press Cancel and turn the steam release handle to Venting.
  • Serve in a deep dish, add the boiled fava beans, sprinkle with cotija cheese, coriander and a drizzle of olive oil.
