Bacon Wrapped Chicken and Creamy Spinach Meat Log


  • 2 chicken breast, boneless, skinless
  • 1 tsp garlic powder
  • 10-12 slices of bacon
  • 1 cup baby spinach, chopped
  • ½ cup cream cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup shredded Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • Add in a large bowl the cream cheese, mozzarella, and parmesan cheese, combine well, then add the chopped spinach and stir until combined. Set aside
  • Place the chicken breast on top of a clean cutting board and pat them dry with a paper towel, flatten the chicken breasts with a rolling pin between a sheet of parchment paper. Season all sides of the chicken breast with salt, black pepper, and garlic powder.
  • On top of a clean surface lay out a large piece of plastic wrap, place the bacon slices overlapping on top.
  • Place the chicken breast on top of the bacon spread the spinach mixture on top of the chicken and fold the chicken carefully and tightly around the long edge. With the help of the plastic wrap, form a loaf.
  • Let the chicken chill into the fridge for 30 Minutes.
  • Open the lid and place the Air Fry tray on top of the basket, close the lid. Select the Bake function, press Temp and set to 385°F. Press Time and again set to 60 Minutes. Press Start.
  • Once the unit finishes preheating and displays Add Food, remove the meat log from the plastic wrap and place it on top of the Air Fry tray, close the lid.
  • Once the cooking time has finished, open the lid and transfer the meat log to a serving plate.
