Winter Electric Pressure Cooking Recipe Contest

Xmas and the New Year are busy time to families as well as businesses.  We’ve been bogged down by orders and shipping, causing the delay of announcing the winners of our 2012 Autumn recipe contest.  Without further ado, the winners are:

The rules of the contest remain unchanged.

  1.  The recipes must be for electric pressure cooker, published on publicly accessible websites.  If you don’t have a blog or a place to publish, we can put them on InstantPot.com recipe section.
  2. Three prizes of complete sets of Instant Pot accessories (a stainless steel cooking pot, a tempered glass lid and a spare sealing ring) will be awarded.  Free shipping to continental US (excluding Hawaii & Alaska) and Canada.
  3. The participant needs to give the right to publish one of their recipes on InstantPot.com.
  4. The winners will be chosen by Instant Pot staff in early Apr. 2013.
  5. Entries are accepted as comment to this post or submission to http://instantpot.com/recipes/share-your-recipe/

Instant Pot Spanish Style Brown Rice

Another Recipe to share with Instn Pot uses (not for te recipe contest)

I love to make this rice when we make tacos or enchiladas for dinner. It was inspired from one of our local Mexican Restaurants’ recipe they shared for their rice. Plus it is a great way to get your kids to eat brown rice!

Ingredients: Serves: 6 – 8

  • 2 Tablespoons coconut oil
  • 1 medium yellow onion, small diced
  • 4 cloves garlic, minced
  • 1 Tablespoon dried oregano
  • 2 Tablespoons tomato paste
  • 2 cups of long grain brown rice
  • 3 cups organic chicken stock (preferably homemade)
  • 1 teaspoon sea salt

Directions

1.    Heat the inner liner of the Instant Pot on “Sauté” setting. Melt coconut oil. Add onion; sauté about 5 minutes until translucent.

2.     Add garlic, oregano and tomato paste; stir and let sauté for about 1 to 2 minutes.

3.     Add brown rice; stir to combine and let cook for another minute or so. It begins to caramelize a little bit and deepens the flavors.

4.    Add the chicken stock and sea salt. Give it a good stir to incorporate all the flavors..

5.     Place the lid on the pressure cooker and lock into place. Press the Manual button; adjust time so that the pressure time is at 15 minutes. When done and pressure has naturally released, remove lid.

6.     Serve.

two InstantPot IP LUX60 300x238 2012 Spring Electric Pressure Cooker Recipe Contest In our popular Winter Electric Pressure Cooker Recipe Contest, we realized how much fun it was to interact with our users.  Most importantly, the submitted recipes substantially enhance everybody’s cooking experience.  In the spirit of sharing, we start this Spring Recipe Contest and will award two Instant Pot IP-LUX60 to the winners.
